Love is in the air, isn’t it? Tomorrow I know some of you will celebrate this so-called Valentine’s Day and some of you might be appalled by the idea. Personally, I’m not leaning toward either pole of the public opinion. Valentine’s Day is just like another day for me. During more than 4 years of our relationship, Firu and I have only celebrated it once and it was quick, like ripping a bandaid – though still felt quite romantic.
But, in case some of you want to celebrate and don’t have time to prepare something far in advance, don’t worry! Here’s a quick and tasty recipe that might just be your hail Mary for a last-minute V-day preparation. If you didn’t know, Poffertjes is a dutch delicacy, which is quite popular in Indonesia due to the colonialism they forced on us. That doesn’t change the fact that this dish is delicious, though.
Ingredients
- 200g flour
- 2 tsp. sugar
- 1/2 tsp. salt
- 1 tsp. yeast
- 2 eggs
- 500ml warm milk
- 30g melted butter
- 2 drops red food colouring
- 3 strawberries, diced to 1cm blocks
- 2 tbsp. cream cheese
- ± 50g icing sugar
- butter, to line the pan
- ground cinnamon (optional)
- chocolate sauce (optional but recommended)
- Mix well all the dry ingredients (flour, sugar, salt, yeast) in one bowl
- Make a hole in the middle of the mixture and add in both the eggs, add the milk little by little while stirring everything together then add the melted butter and mix well.
- Leave the mixture for ±30 minutes (don’t forget to cover up the bowl!)
- Afterwards, open the lid/cover and add in the food colouring then mix well
- Heat the pan up and line it with butter, turn the heat to low and pour in the batter until around half the hole
- Cook this half for ±3 minutes and take them out
- Pour the batter like in no. 5, add in the strawberry and cook it until it’s half-done (the surface is still liquidy) then add the cream cheese (1 teaspoon per hole)
- Now comes the tricky part: put the batter from before upside down on top of the batter in the pan then let it cook a bit more until they’re attached together and become golden
- Arrange them on a plate and strain some icing sugar (and ground cinnamon, if you like) on top
- Eet smakelijk!
Tips: Do not use cold milk and cold eggs as they could prevent the dough from rising. If your milk and eggs are cold, let them out beforehand or heat the milk up a bit in a saucepan. I do not recommend leaving the dough for far longer than 30 minutes, it could overspill. Add the food colouring drop by drop, in case it would become far too red (mine turned out to be not red enough). Remember not to set the fire too high, as it would burn quickly, just cook tentatively. Do not add the cream cheese the same time as the strawberries, it would melt before you could blink. Also, don’t be afraid to fail. Lass es euch schmecken!
